Cowboy Casserole

 Ingredients:

  • 4 stalks of celery, chopped
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cans Rotel, drained and rinsed 
  • 1.5 cups frozen corn
  • 1 22-oz. can baked beans, undrained
  • 1 smoked sausage, chopped
  • 1 15-oz. container of shredded BBQ beef, undrained
  • 1 16-oz. package of biscuit dough
Preheat oven to 400 degrees.  Sauté the celery, onion, and bell pepper until tender.  Mix in the Rotel, corn, baked beans, sausage, beef, and BBQ sauce and stir until everything is thoroughly mixed together.  Let simmer for about 15 minutes until mixture is bubbling.  Pour mixture into a greased 9x13 baking pan.  Separate biscuit dough and place individual biscuits on top of the meat and bean mixture.  Bake for 30 minutes or until the biscuits are done.
